When you use free public proxy servers, you need to keep in mind that you never know who the server owner/administrator is or why they are running a free proxy server. Not all are safe to use.
My organization provides proxy servers because we own our dedicated servers. This site and all the rest, cannot detect the use of our servers as proxies because of the security protocols we have in place. Our servers do not reveal anything about the users connected to them and do not reveal real ip addresses even when Java is used in the browser. Our servers are specially coded using the highest encryption available to man.
As to the level of anonymity on those free servers, they vary greatly. You want to look for level 1 proxy servers which are highly anonymous. Another way that websites know you are using a proxy is through the use of Java. If your browser uses Java, as there are very many known vulnerabilities with Java, it can be exploited and reveal the proxy you are using. Your best bet is to look for Level 1 Highly Anonymous proxies and disable Java in your browser. Internet Explorer by Microsoft is the worst browser to use. Every browser exploit known to man has been run on Internet Explorer. I recommend getting Fire Fox.
