The watch adds maturity to my age (you cannot disagree about that part).
It doesn't add maturity.
Trying to impress with a bit of bling is not a sign of maturity - certainly not in business, anyway.
Maturity in business is trying to impress by delivering a great service/product.
If you came to meet me wearing a Rolex, that could potentially let me know something about you that I would incorporate in my decision about whether to business with you.
For example:
If you wanted me to notice the watch, that would be obvious by the way you wear it - and that tells me something about you.
If your shoes are down-at-heel, or your suit isn't bespoke/tailored, or your shirt is low-end - that lets me know you can't afford the full package
If your nails are dirty, or your shirt is not freshly pressed, or your tie is old, that lets me know you don't have attention to detail.
And if you arrived flashing a Rolex, that would make me more observant of all those things.
I don't want to do business with 'Mr Flash', or 'Mr Pretend', or 'Mr Sloppy'
I want to do business with 'Mr I can do the Business'
