My Site is written in Italy but i only found some blogs for guest posting in english, and some of them already agree'd that I could make a guest post. Would this even make sense?

1) I have to translate my keyword to the english language so its not an "exact" match anymore.
2) Obviously im linking on my own site which is in another language then

Does google 'like' this? or does it hurt more than it helps?

If the blog your posting on has good metrics. Thats what counts
What you are doing is linking to the authority site {yours} to show where your article came from

So yes well worth doing

I believe you can target non English sites, but if you search here many sellers will offer you post in the language you want

What you can try is ask someone to write article for you in english for the niche catering what your website is offering and ask your writer to include your own language keyword in the article and link your website in the guest post.

Getting a few links from another language won't hurt. If the site is related to your niche and you not paying more $$ for it means no issues. You can go-ahead

you can also add your italian keyword somewhere in the text if you really want that as an anchor, but anyways if the metrics of the sites you post to are good, the backlinks still work.

It won't hurt and here even will be rank boost but minimal.

It's best to use naked URL as anchor text if it contains keyword.

What I do on my English PBN sites is "citing the source". I saw on one huge News site back in the day. This allows natural insertion of foreign anchor text.

EXAMPLE:

This is English language sentence about the topic and [english_ema] (source: [italian_ema]) that just keeps going on and on.​

English is a widely spread language - Google definitely values links from English sites that point to an Italian site.

For example, any international brand in Europe can expect to get links from German, English, Italian sites and it is completely natural and could help a lot in terms of rankings.

However, if your site is in Italian and you get a link from a Chinese or Russian website - that won't help you for sure because it doesn't make any sense (why would a Chinese person care about an Italian website)

It makes more sense to get links from Italian language sites

Why not use old tricks like hosting a 'scholarship'? Great way to get Italian colleges and universities to link to you

It won't affect your site (or) You can write other language contents which accepts your keywords. Ex:- Guest Posts
