I wrote an article comparing "product x vs product y", but google ranks my article for additional keyword "product x vs product z" in top 10. The click through is low since I didn't target the other product. Should I just put the extra product in the title ("product x vs product y vs product z") and add some text to my article? Or is it better to just create a new post and interlink since google is favoring my website?

First, check if your product x vs product y is appearing in the SERPs at all or not. Sometimes, some articles don't appear in the SERPs.

if it is in top 3, then what is the difference between you site and the #1 ranked site? what user intention is he answering that you are not. look at the content before you start playing with title tags.
