If i'm wanting to target a different segment on my niche would it be better to try and promote my main page, a category, or an individual article to that keyword?

Individual article will give you better outcomes. Try to figure it out and see it will make your promotion the best one.
 
Articles are the best way. I would say go for it because when targeting a specific niche, you should try to focus on articles.
 
Depends how big this new "segment" is and whether you are going to be doing lots of promo for it. If this is big then create a new category and use keyword rich articles within that category.
If it's just one off use an article.
 
Yes, it solely depends on how big the segment is to conclude if that needs a link in your main page or a whole lot of segment with promo articles with keywords. You have to make sure you choose the right keywords to get traffic. All the best.

Try to use more article obviously it has to Unice. And you can use more than two keyword for your site.
