[Question for a pro] Site Architecture

I'm wondering what the best approach to my dilemma is.

I'll explain with an example:

I have a service offering website, lets say it's a plumber website, so my menu structure goes something like this:

- Home
- About Us
- Services
- Service 1
- Service 2
- Service 3
- Contact Us

Now, the above is all fine and well, until I want to add at least 20 more services to target specific keywords. I can't have 20 second tier menu items under the "Services" menu items, it's just too much and won't look good at all...

What would be the best way to move forward? Can I create these service pages and just not link them in the menu? Will they rank if they aren't linked from my homepage (since most of my backlinks go straight to my home page).

What's the best way to do this?

Not one person who has had this issue?

Perhaps I'm not explaining it correctly. Let me add this:

The additional keywords (services) are very far apart from each other so I can't optimize one page for a few of them.

In total, I'd probably have around 50 pages of services, each with their own pricing structure, but they all fit in one niche, so I'm not going to go through the trouble of creating a new site for each "sub-niche". My domain strength is good so don't want to start a new site as it'll take long to get it where I got this site.

Maybe you should try to group them into a few sections and then make an expandable on click areas for each section with grouped links. This way you can have all of them links on homepage.
The second option is to make a subpages for these groups and have it like:
homepage --->
----->group1 page ----> service1, service2, service3
----->group2 page ---->service4, service5, service6
----->group3 page---->service7, service8, service9
