Do you guys intergrade Schema markups in your blogs?

Does it make a difference in a non competitive niche to rank?

I wonder if I should spend the time figuring it out or rather spend this time on making some great content.

It can make a big difference. Sometimes google blesses by ranking you in the featured carousels if yours is a new websites.

It adds more to your serps. Like if you do how-tos or recipes or content that has a schema markup.

It's a 10 minute job if you know how to handle json. And there are plugins too.

I'm started using now I'm pretty sure it will effect serp.

Nice one. Does it require a pro plugin. I have astra schema plugin I never used it because rankmath complains about another seo plugin if I install it.

I've seen positive effects with adding FAQs to posts that were not performing well
 
In today modern world with so many individual opportunities, you can use schema markup on your pages or on your posts.

You can use schema type; article, news on pages, can not say if that makes a difference in seo ranking, pages vs post(?)
For your posts you can use schema trype: blog posting.
