proxy question vps?

Sorry i have no idea where to ask this question so i hope its not in the wrong place and if so please move it to the correct place for me

Anyway my question is i have a V.P.S. can i set up my own proxies on it? if so how do i do it
the server is an apache and i am using parallels plesk.

i have ips for my websites so is it i just open a port to those ip's or am i way off the mark here?
