Post Date In Blog

Please excuse the (probably) n00b blogging question but I'm using WordPress to write a couple of blogs for restaurants to allegedly boost their SEO and when they get a positive review written online I'm quoting the review and replying to it as manager of the restaurant. Now before I started doing this they had older reviews and the manager has asked me to backdate (if that's the word for it?) the "Oh look a new review!" post with the response (eg "We're glad you liked the house red wine" blah blah blah) for the older posts. Now I know that you can set the date to be in the past on the right of the WordPress dashboard but how does Google feel about this? I'm doing the blog sitemap manually vs automatically so I can doctor the post date to reflect the apparent post date in the past but again I'm not sure if Google is going to realise the post was written in February 2014 vs in eg October 2012 like I'm pretending it was. The urls are custom so that isn't a factor. Anyone know how Google interprets this, does it just think "hey I haven't indexed this before now" or has it ways of knowing I'm backdating posts?

Lol, I already am doing it but I'm worried I'm doing it wrong and Google is a) onto me, b) laughing and c) my blogging efforts are therefore in vain cos Google knows a fake post date when it sees it.
