Moved from shared hosting to VPS: What do I need to know?

Depends on your technical skill level and budget.

DO has lot of guides on installing LAMP and LEMP stack and running your website.

Just go through a tutorial and see whether you can do those tasks.

1. Use Runcloud, or stackpath or other alternatives, I prefer Runcloud. It is a vps management service and basically you have nothing technical to do here. All is set.

2. Turn on back on vps provider or use plugin-cloud method as other users have suggested.

3. Make sure the vps provider is flexible with sudden resource upgrades.

No different than shared one now. But faster and you are in control. Simple but good productive solution I've been using for long as a not-too technical person.
 
I don't recommend a newbie to host a 'money making website' on unmanaged VPS, if you screw up, you might not getting your data back. One more thing about 'unmanged' VPS is you need to do your own backup.

Anyway, the most basic thing is to learn how to SSH~ing into your server, securing it and install apps.

You will spoil your website on self managed VPS. Get a managed VPS depending upon your budget
