Local SEO GBP Multiple Profiles

Our goal is to rank in the local pack for six US metros with a single, fully-remote service business. After the first 6, we are looking to aggressively expand.
For a business like this, is the safest play to run one Service-Area Business profile that hides the address and lists all metros, or is there a sturdier workaround you’ve used (e.g., satellite suites, multiple SABs, other tactics)? Any pitfalls we should watch for?

Or, am I totally off here and there is a totally different way to tackle local SEO for these cities?
You lose all the proximity ranking factors when you hide the address. Get different ones in each city with an exact match kw business name. Or Exact match plus city. I just did this in Phoenix and was ranking in the 3 pack all the way to the mexican border.
 
For a remote service business like your, I recommend creating a main SAB profile, hiding the address and listing all service areas to avoid violating google policies. If you want to expand, you can consider using reputable satellite suites addresses to create additional SAB profiles for each metro, but make sure each address is real and relevant. Avoid creating too many fake profiles because it is easy to be penalized by google
