Pretty much everything is saturated nowadays. Try to ask around or to think about what lacks from the internet. What business would work. Or pick an already saturated domain and do the things better, add something new to the table. Good luck!

Google adwords would help us to know about the less structured niche but today in this era of competition it is hard to find a less structured niche.. however good luck for that

If I were you, I would have thought about monetization and traffic part to start with.
I think if you start thinking about money before the niche you are already lost

What you're looking for is called a sub-niche. These sub-niches are often much less saturated than their illustrious counterparts, although they may require a bit of research on your part. You could always start with thinking of a popular niche and then considering what types of specific people that niche appeals to that you could create a website for.
For example:
The point is that you need to get very specific about your target audience. Of course, you would also need to find out whether or not these sub-niches have any real consumer interest, otherwise you would be wasting your time.
For example:
- You could create a regular old dating niche website and compete with larger dating websites, or you could create a dating niche website for people who own horses.
- You could create a fashion for amputees website rather than just a general fashion website
- You could create a tech for blind people (yes, blind people can use the Internet too with JAWS screen reader) rather than a general tech site.
- You could even create a finance website for chinchilla owners!

People miss out on low hanging fruit all of the time. You can easily find keywords
with less search volume in competitive niches to rank for.
Don't neglect those small search terms. For an authority site I would recommend
picking up plenty of keywords. It's not unusual for large sites to have hundreds if
not thousands of keywords.
