My blog platform has multiple category blogs like blogs on banking, finance , business , legal etc.. is this an issue for ranking?

No, there are billions of news websites out there like that. Just write high-quality content, and you'll be fine.

Becuse I read it on google seearch central. "producing lots of content on many different topics in hopes that some of it might perform well in search results " not going to work

People will say that covering different topics doesn't matter, citing longstanding media sites as an example of how it works.

Forbes can have coupon pages and cooking recipes under one domain name, but for smaller budgets with less authority, it will help you rank if you niche your content.

Is not an issue for SEO as long as each category has well-organized, relevant content that meets user search intent. Proper keyword strategy, site structure, and internal linking are essential to avoid issues like keyword cannibalization and thin content.

It can be both good and bad. Good because it offers wider range of content, attracting a diverse audience. On the other hand it can also dilute your website's focus which would make search engines harder to understand the primary niche.
You can consider creating subdomains or separate websites for each major category.
Sounds perfect for ranking - assuming you have enough good quality content on each, and the topics make sense for your website!
(If your website is about pet products and you've got blog topics like banking and finance, it'll be bad though!)

Target single topic if you want to rank faster, plus it will attract more links. Write big ass tuts on that topics or solutions to issue people search online.

I think the key here is that you keep linking scheme very straightforward and simple and that each domain produces high-quality content. Also keep in mind that if you sunset some category, if you redirect it to root or somewhere else, you need to have relevance aka migrate content. Nowadays redirecting all to new root doesn't work as well.

Nope many sites have around 20 categories as well they are better as the reader it becomes convenient
