So i have a site and im trying to figure out if im over optimising or not.

Lets go !

So i have a page targeting grey cats, and target a different variation of the main keyword on sub heading.

<H1> Grey cats</h1>

<h3> Small grey cats</h3>

On this site on each page i would have lets say 20 images.
On each image, the alt tag would target keywords like this below.
"Random grey cats", "cute grey cats", "scary grey cats"

So each page targets "grey cats" and will have a 500 word article targeting that keyword with some LSI sprinkled within it. Then the same page has 10 - 20 images also targeting different variations of the "grey cats" keyword. Would this ruin the on page? Do i need to dilute keywords on image alt tags? Or just target grey cats in headline and just focus on LSI on image alt tags?

"Random grey cats", "cute grey cats", "scary grey cats"
This tells what every image on the page entails and it's in no way keyword cannibalization. A single page targeting "grey cat" with LSI keywords as alt text for the sprinkled and used in the images would set you on a great path.

Here is something from @BassTrackerBoats

It would help with alt text/image optimization without over optimizing.

I think you are confusing cannibalization with over optimization
Cannibalization is when you have two sites targeting more or less the same words or at least the same search intent so when some user searches for the concept, one of the two sites may appear over. So this doesn't seem to be your case here
Images may cannibalize though, in Google Image Search if someone is looking for grey cats in the image search box, one or many of your images may appear (or none at all, because of this cannibalization)
In the other side, if you are talking about over-optimization, I truly think you are. In fact, one of the biggest issues I've found, is when doing a keyword research, most of the keyword combinations tend to use the same wording, so in the end, when putting down all the words, the keyword density in the text, the headings and the images is excessively for the primary keyword.
Conclusion: don't use the primary keyword in every single image, not even in more than 1 out of 3 images.

Oh lord, I have, but only on a few hundred images . But i started to mix it up when i started to smell over optimisation. Most of the image alt tags apart from the first few hundred are like this now "grey cats live tonight" "grey cats on stage - made for the greycat wesbite" etc etc. Im including the main keyword "grey cat" but being quite discriptive with whats been shown in the image, so turning it into a longtail, "grey cats smell like piss".

:confused::confused::confused::confused: Nt sure if this still taking it to far.:confused::confused::confused::confused::confused::confused:

I think @SirLouen was quite descriptive in his answer. I believe I am still new to the whole thing of SEO and I have done the same thing before, not very long ago though. It takes a heck lot of time to correct the mistakes. Over optimizing is a sin which I learned the hard way
