I believe this is the cause of the change in traffic quality on different days as rankbrain is learning to serve serps for longtails, i also believe this is why in google's keyword planner they have grouped similar keywords together as far as their monthly traffic average. For example keywords like car and cars now show the same monthly search total.

I think you're correct that RankBrain is causing fluctuations in overall traffic, because it's used in the interpretation of long-tail searches, and Google has pretty much admitted they're not even sure how it works. That said, it shouldn't affect a site's ranking of the fat-head keywords at all, and should have minimal effect on queries that are low volume but aren't truly unique. Those rankings are, supposedly, determined primarily by links and content, without regard to RankBrain.

Agreed the AdWords traffic is bad and getting worse. I think the problem is three-fold: (1) RankBrain is bleeding into AdWords and screwing up broad phrasing ads; (2) Google has no good solution to fraudulent AdWords clicks, given the ease of automating them with proxies, etc, and that crap is growing; (3) extended AdWords are confusing people into clicking before they're really ready, particularly on mobile devices.

But Google doesn't give a shit if you, me, and a million other people are unhappy with AdWords. If a massive advertiser (big box stores, travel sites, etc) complains, they'll address it for them alone. If someone like you or your clients complain, there's a million other dentists or car repair shops or private tutors or whatever to take your place in the casino. At least that's what they're banking on for the moment, and they're probably right.
