Should I also do a few links to authority websites that aren't my own. Will this help me rank better? Any Benefit to SEO? Or should I just only internally link to my own pages of my site?

I'm not a believer that linking outside of your site helps, but absolutely internal links have huge value!

How many internal links do you use per 1000 words, on average?

I link at the bottom of most of my sites to similar content.

So if I have an article on digital marketing, I will link 3 other digital marketing articles in a "read more about digital marketing" box.

I also link naturally in the article.

I don't aim to hit any specific number per 1000 words

Not going to help you in ranking, i mean linking to authority sites. But inter linking plays a major role.

Just telling you right now, internal linking/siloing your site, is VERY important for ranking, sometimes siloing your site fully can outrank your competition even with no backlinks (for easy to medium keywords of course)

Occasionally linking out to authority sites might a positive impact upon your overall SEO efforts but internal linking is essential..

No benefit bro. Improve your internal Linking and get more links From Outside

I would link to an outside source every now and then to look natural. That's what real websites do after all.

Linking out to relevant authority pages is natural and tho I haven't seen direct benefit myself, in theory Google likes more websites providing value than "dead ends".

Link out to relevant authority website will add a positive signal to the google. But it should be placed naturally into the content also add value to the readers. In SEO perspective, spreading the link juice throughout the site. It helps to increase your site conversion rate, reduce the bounce rate. Better crawl and indexing.
