You can definitely change the permalink structure to category/post easily in WordPress settings under Permalinks. Just be careful though — changing it can cause 404 errors if not redirected properly. A plugin like 'Redirection' can help fix old links. Hope that helps!
 
It depends on what you have in mind.

If you are using Rank Math, for example, you can simply hide the category slug in the settings.

You only introduce categories if you want to build a large website with many categories that also differ in terms of content.

Are you planning to publish more than 50 posts? Then use categories.
