Sometimes 1 (money site) I'll have other links to random sites in there. Occasionally 2 money sites and very rarely 3 money sites, they're rarely the same mix of money sites too, I avoid establishing a pattern if I can but naturally sometimes you're going too.
Thing is, link patterns/wheels are so common in the 'real world' because related sites link to other related sites in a tangled web, that I think if you don't go full retard you're generally safe anyway.

you should update your pbn once in awhile and also dont link them all using the same anchor texts. you need to keep track of each anchor text you are using in each PBN so you know how much percentage of exact anchor text you are using for all your backlinks. That's very important. Also, if i were you, do not use spun content (even if you fix the grammar later) for PBNs. and like everybody said, you need to diversify where you link to. do not just link all your PBNs to your money site, sometimes you need to link to your web 2.0 or other tier 1 links.
i think the most important thing is ALWAYS to keep track all of your link structure. You need to know your own link diversity and your own anchor text diversity.

If you done everything right, you don't need be afraid. Make sure you don't leave any footprints. Make sure that on each website is different administrator name! No Admin everywhere. Keep your eyes also on quality of content. No "spun" articles! Only unique! - This is important. If you used the same(rewrite only) article on each website, there is risk.

Make sure your pbn sites look like actual sites instead of one-page crap.
Ultimately, you can tweak every single thing, but until you start pulling the trigger, you won't get much info to learn from.
You can start with increments and see how that works, you shouldn't be building links from all domains on day 1 anyways.

You have nothing to be worry about if you do everything right.
Removing footprints, anchor diversity etc.
Just do it, it is your only choice anyways.
