How to protect my data @ docs.google.com

First of all - I really apologize because I looked carefully but did not find anywhere where my question seemed to be good to be posted.

Very basically, I have 3 guys that have access to a docs.google.com spreadsheet with a lot of confidential information (mail/facebook/number/etc.) about the customers of my website.

They need to be able to copy / paste inside my Excel Sheet in docs.google.com because they receive the information in email or Facebook and need to put it into the Excel Sheet.
My question is : is there anyway for me to see history of copy-paste that they make, to make sure that none of them is copy-pasting ALL my existing customers to their local files ?

No.

I'm not aware of an auditing feature in Google. You can either encrypt sensitive data into a string (hard and maybe a waste of time), or (better yet) don't use Google Docs for sensitive data. Especially if you are going to share it... and for the record seeing a copy/paste record wouldn't mean they couldn't simply screenshot it. You're being dangerously lazy IMHO.

Thanks a lot @ThopHayt, very appreciated feedback. You are right, I need to find out a new system probably.

As for the ''copy/paste'' record I meant ''Is it possible to see not only the fact that they did a copy-paste but see what they exactly copy-pasted''.

For example, see that dude1 who has access to the Google Doc copy pasted 120 times today and see details. Maybe like 119 time the data copy-pasted was very small (like 1kb) but once the data copy-pasted was 180kb and thus look suspicious. Hope I make sense again.

Nothing is secure online.

Not that I'm aware of. That is called "auditing" by the way. You'll need a better system for that I assume.
