First you record the screen with some sort of app (Android) or Airplay on iOS.
Load it up in After Effects.
Replicate the exact same font and style, and cover the original up with the background.
Create a script that counts up considering the current time of the footage and link it to the text field that displays the numbers.
You can do the same for the resources bar, to have it filled up as time progresses.
Record yourself and once you reach the point where you want to show the "proof", you make a really seamless edit in your footage where you actually load up your modified footage in your phone and have it transition smoothly so it will seem like it's real and doing it by itself. One thing you will notice is that people will never touch their screen during this period because it will make the video player bars appear.
