How do they know if I'm looking at their profile?

I don't think you know someone is looking at your profile. This is unless you are viewing their Insta-story in which case they can see a list of people who viewed their story.
The most likely thing is they are just as mentally unstable as you. When you unblocked them, the person was just on one of their couple of hundred daily routine checks. They realised you unblocked them to check them out, and got the upper hand ad blocked you.
However do not worry, just as they got chance to block you by constantly checking for the unblock, I am sure one day you will get the chance back. What a life.

I know all about this kind of thing as my ex girlfriend used to do it to my ex. And she thought she was the mental one, when in the normal world, they both fucking retards with nothing better to do than try and check a Facebook account multiple times a day every fucking day.
