Facebook ai has gotten better at finding the right audience. start broad with a few related interests, then narrow down based on performance.
 
Does Facebook ad setup still require interest keyword testing? Is it more appropriate to use one or multiple interest key
Exactly starting broad lets the algorithm gather data faster and then you can refine your audience using whats actually converting rather than guessing upfront.

FB doesn't use keyword based interests like Google, It targets based on user behavior and engagement.
