Realistically I can rank for high competition kws and overtake stablished authority sites using new EMDs? With good content and high quality backlinks

Yes of course. I just posted a thread regarding this a couple of hours ago. I just registered an EMD 5 days ago in the Weight Loss niche and I've done no Off Site SEO for it yet and it just hit Page 1 today so it can definitely be accomplished.

Remember though, it's not just getting it ranked but maintaining that rank as well so with that said, even though you may rank quickly with an EMD (Exact Match Domain), you will need to work on good quality backlink building to maintain your ranking(s).

I've few EMDs and the competition is not so high, they do rank without any prob

The thing is EMD's were devaluated a lot lately,especially in US.There are still a lot of countries were EMDs still haves the old power that we all know about
