How do you manage your own eshop if the content isn't in english? Do you hire freelancers to translate all the pages or do you rely on G translate or other apps/AI tools to handle the language switch?

Depends on what you're using. In Woocommerce, I had to make 2 separate sites for different content, but it was updated and translated using polyglot.

Shopify works in a different way, I'm not too sure about that, working on a shopify store now

What do you mean? I assume you know how to speak the language of your own website. If you want to expand to alternative languages, AI is the best solution, the quality of translations are great in general. DeepL is also a great tool to consider, not AI, but works much better than Google Translator and most automatized plugins that relies on it.
