I've seen people sell non Apple "airpods" BT headsets / posture correcting brace / portable blender / etc sold as 1 product stores

You can have 1 product store and make thousands of dollars, same with general store. But is not related to that, you need to be focus in first find a product which you can determine is selling good, then one of the most important is make a very good marketing around it, if you can brand a product and make a good marketing, it should sell.

I think focusing first on a 1 product store can allow you to optimize deeply the funnel. I see so many dropshipping websites with thousands of products with a really bad funnel ( bad looking homepage, unreachables buttons , ... ). It is all about finding a balance between quantity and quality
