Silos will always work.

It's not an 'seo trick' that will suddenly stop working. It's just a way to correctly structure your web site that makes it easier for the google crawler to understand what your site is really about, and at the same time makes it better for users too.

I read your step by step guide How-To Building SEO Silos. Also, I read this one: https://www.authorityhacker.com/site-architecture/

First, I create a category & then create a page using the same permalink. Then we need to redirect category to the page. RIGHT!

SILO WILL NEVER DIE.
It is not only a seo technic but also a way to organize the relevent pages or post. This way it increaee better user experinces & make search engine to know what is your site about.

Yes, Silo's work beautifully in 2018, you can rank a brand new site against numerous popular high-authority ones if you have a tightly structured silo. As Google focuses more on semantic search, properly structured and well-categorized content silos will surely be rewarded.

What's the alternative, to create a big flat site?

Siloing is creating a logical structure, with distinctive topics based on how google understands content/topics, so you can build, in the eyes of google, very strong topical relevance. It will always work, because you are making it easy for the crawler to understand your content and website.
