I believe they use that data looking at how advance Google has got in AI.

It's a theory, but I don't think Google is going to rank your site based on traffic.

yeah why not? If they have a source of data they would love to use it. Companies are spending hundreds and thousands of dollars for that, why wouldn't they use it?

Yes they use everything, their AI is aware of everything that has been happening around in google in Real time 
I don't think it will affect the ranking if google analytics is installed or not, but Google does use the analytics data to rank a website.

They are probably using every piece of data they can get their hands on for various purposes.
Or are you referring to metrics on your on site specifically like bounce rate, time on site etc?
These can influence rankings indirectly. For example, high bounce rate will result in lower rankings if the search results in the past had low bounce rate for the same query.
