Do google really understand schema?

I made some Schema tags for my website and some schemas ex. article schema, faq schema, product schema, breadcrumb schema google can understand but some schemas like services schema, web page schema etc. google cannot understand.

I checked these schema on google rich result

And if google does not understand these schemas should i really use those on my website?

It does, you can check the full supported list here: https://developers.google.com/search/docs/appearance/structured-data/search-gallery
If your schema are not showing with the testing tool (https://search.google.com/test/rich-results), then something is wrong with your code,
The rest is up to google to either use these schemas or not, they're not really guaranteed to show in the SERPs especially some specific ones
