Changing website name SEO & sitemap?

Hi everyone,

I want to change the name of my website and keep the same content. The new website was never used before.
I have to setup a 301 redirect for my old website (moved permanently).

Then I will use google console to notify the change of address.
Google say is a good ideea to submit a sitemap...but I never had a sitemap for my old website.

From what I understand a 301 redirect works like this:
-see the old link and then transfer the rank to my new link (identical database and links).

The question is:
1) should I use a sitemap JUST for my old website (and google will crawl again my old website to see the changes)
2) should I use a sitemap for my new website (but how google will know if is a duplicate link, a new page or a 301 redirect)
3) submit sitemaps for both websites

I will keep the same google analytics code for my new website.

I know it easily does from Googlemaster account. but I want some ideas for sitemap.ans if I use in old sitemap then google will crawl again my old website to see the changes. If I use new sitemap then How google will know it is a duplicate link, a new page or a 301 redirect. otherwise, submit sitemap for both websites.
