Its not an uncommon practice, but I personally don't like doing it unless you're changing it to your raw URL.

Just don't go nuts with it. One or two at a time are fine, but don't be going back and changing tons of anchors from your entire history. That WILL get some unwanted attention and create a huge footprint.

I don't recommend to change the anchor more than 1 time.

I changed a bunch of anchor links in the past few days, didn't see any negative effects yet. I did however drop from 90 to 41 in serp for the new keyword. Still pointless until I can get it under 10.

Yes you are safe, if the anchor text keyword must be a low competition.

If you change the already low competing keyword now, It will make bad and unsafe for your site. I prefer not to do this.

That's just silly, whenever a company re-brands a product, they are going to change the Anchor Text. If something was called "Mike's Donuts" and now they are calling it "Yummy Donuts". Why in the world would google or anyone else penalize a company for re-branding a product. I owned a retail store and I sold pet food, I couldn't tell you how many times I had to change anchor tags for all the times these companies kept re-branding their products. One week it's "Potato Free Grain Free Dog Food" next week it's "Pea Protein with Limited Ingredients Dog Food" - That's just normal flow of business.
