A lot of good tips on the first page of this thread. @blackbeans gave a good answer which is basically also what I've been doing. Burnout definitely is real and you do need a lot of content for a site to start being taken seriously by visitors; Google doesn't mind for volume (more quality and SEO) but visitors won't click unless you've got enough content.
You can go into any niche to work a project and have do well, so long as you can develop upon it enough and with long-term enough interest in the topic.
