The best niche is the niche you can stick with

From experience, most publishers / site owners only produce less than a dozen posts and get bored or distracted

You need to ADEQUATELY COVER YOUR NICHE or you won't get much traction

25 to 50 posts minimum

But if you want to truly compete shoot for the 75 to 150 range

Most must be informational with conversion content making up around 10% of your total site.
 
A lot of good tips on the first page of this thread. @blackbeans gave a good answer which is basically also what I've been doing. Burnout definitely is real and you do need a lot of content for a site to start being taken seriously by visitors; Google doesn't mind for volume (more quality and SEO) but visitors won't click unless you've got enough content.
You can go into any niche to work a project and have do well, so long as you can develop upon it enough and with long-term enough interest in the topic.

Something that you have interest in learning more about. It takes time and energy to craft new content
