I would say there is no such thing as best niche on Instagram. What I have discovered is that any niche can convert on Instagram, though I am not an Instagram person like that and never really experimented it either.
But I have seen multiple niches thriving in my Instagram feed. Even coprobot promoting their faeces shits.
Stick to what you're good at on Instagram and use you bot with dilegence and smartness. Enjoy the features of the bot till Instagram slams it with their next algorithm.

The niches that seems to be profitable on Instagram, are Make money Online Niche, Weight Loss Niche, Crypto Currency, and Shopify/Amazon FBA. However these niches are very competitive.

You can start with fitness/yoga, fashion and photography. These niche are very trending nowdays and easy to grow followers in your account.

I would say the best niche for a beginner is the niche you know the best. Since, at some point you may have to engage with your potential followers, you want to actually know what you are talking about. Also if you write captions that are related to your content, they should be as accurate as you can make them. You should also know what people want to see in a certain niche, like if people like a specific dog in the dog niche more than other dogs. It'll be easier to get followers and engagement if you target your content properly.
I remember one of the accounts I wanted to make was a sports account, so I was doing some research on what to repost and I realized I didn't know the first thing about sports. I wanted to repost pictures and vids of popular sports stars and I didn't know who the fan favorites were. Unless you have countless hours to spend researching a niche you don't know very well, I would suggest sticking with what you know very well.
