Whats to say I dont pick a few nice looking websites from Google and tell the affiliates that I made them? How would they know?

Just slap together a quick blog about whatever, and give them that as your site. Just copy and paste some content from another site. Or just write about something you know about. No one ever said it had to be a regular website. It works
