I have two new websites made about one month ago (new domain) and I was building some backlinks on it. Since about 2 weeks all the keywords (about 10 per website) are between position 100 - 150. Sometimes going down to #20 for a few hours, but then going back. There is almost NO competition in that niche.

Anything wrong with that or just a regular google dance?

I would just give it more time. Keep building links and social signals steadily.

So its been more more than two weeks now and its still dancing around like crazy. I don't build that much links actually.
The content is on the websites since May.

The niche has almost NO competition. Normally it should be at least in the Top 20 after one month WITHOUT building any link. I really get the impression that something is wrong, but I can't point my finger on it. I builded the websites the same way I made about 30 others and I never had any problem with the other websites.

Did you build on an expired domain that was possibly previously penalized? You can check WHOIS records.

I can bet your website has over-optimization issues. If you can fix those, your keywords will be in top 10 as soon as the pages are cached and re-indexed again (assuming there is NO competition at all like you say).

The domains are new / registered May 2015.

You mean I used my keywords too often? I will try to reduce the density.

@nakamura: Yes I mean that plus other things that can cause over-optimization as well. Both of you guys should read phpbuilt's threads here and here. He explains it perfectly and better than I ever could.

You would need to focus on building a few links to make it rank higher!

For the keyword variations, you can do something like 20% main keyword, 50% domain (raw urls and variations), 20% brand, 10% generic like click here, visit site etc.
