I want to use Stripe payment to my Shopify store. I want to does Stripe ask any document. Like Driver License, SSN or any other document. I want to do business as individual. So do i need to provide them EIN?

Stripe required all necessary documents including License etc
 
Depends where do you live? If you live in one of the supported countries then you are good to go, you need to give them the real info they will ask for, and if you are a company in the USA and have EIN, you can use that too.
But you first need to know if they can work with your business or not, as they have a long list of business niches that they don't work with or they consider it high risk.

If i use it as individual. Then i won't need EIN for USA account.
