I'd agree that there's not much in the way of real/actual value in EMD (exact-match) domains anymore - although there is some - so I'd go with the more memorable of them which I believe is option a) TheRedShoe(dot)com. Also, the .co.uk options is definitely the best approach if geotargeting.

I would suggest "medium difficultly" based purely on the RDD (referring domains) and BDD (domain backlinks). I think it is important to know the keyword though as some terms/phrases generate may very different SERP styles.
