If you are using Wordpress search for a plugin called WP twin, just make your twin and upload it to the new host. After that remove everything from host 1

In my opinion it depends on your budget, Magento is the best but it is very expensive and complicated to maintain, it is the best solution if you are serious about your online store if not, or if you are just publishing a couple products check wordpress or other opensource alternatives...

Use whois privacy, find an alternative ecurrency for paying everything avoid using your credit card, make your work through a VPS with a VPN server behind having 2/3 different providers and keep rotating... there are many tricks to stay hidden online...
