I think most of the amazon affiliates sites being made by BHW members would be competing against them. But I think if you create something that big with a long-term view then you might be able to compete against them in my opinion, not for all keywords but for quite a few of them.These are the sites that you'll struggle to compete against.
Wirecutter is another example, it's owned by the NY Times, so think of the money they have behind them. They're also contributing editors on Engadget, so think of the traffic and juice from each article on there. ( engadget.com/about/editors/the-wirecutter/ )

From my experience, Yes because you have amazon affiliate links on your site you would be directly competing with them, but if you pick your keywords correctly. Write your articles around your keywords to drive traffic to y our site. You should be fine. I don't really think how saturated any niche is anymore is really a factor, its truly depends on how well you pick your keywords. Like, Think about it this way, if you can rank like 10 articles for keywords that searched for 1,000 times a month in top 3. Thats roughly 10,000 pages views.
