a 300 page fluffy book isn't worth nothing, and there have been well appreciated 20 page ebooks that sell for 79

It depends on the quality of it, not quantity. You want the customer to get fascinated about it, not bored as crap... If it's focused mainly on quantity to look professional and all that stuffs you'll just make the customer waste time, in return you'll get terrible feedback. My advice is sell the e-book at its right price, not the average one. If your e-book is good you'll get amazing feedback, reviews, supports and helps, and the previous customers even could buy your next product.

It is all about the quality, it can be 1 page or 1000 pages, if you are showing people something worth value then it nails the $12 price tag.
I have sold ebooks before, some of them sold 100 copies at $20 some of them 10 copies at $100, it all just depends!
Also someone wrote that people will be out to get you, I can 100% agree with this, everyone will try and put your book down and do there best to get it for free
