My partner is a Scott, she has lived in Australia all her life but she has a British passport and a Scottish dad . So we will defiantly be spending time in Scotland.

Seems you have your mind set on the UK so I won't try to discourage you. Just note that there are much better and more cost-effective places to live/work in Europe.
