a lot of country is cheap, if you're already there, but you should calculate the travel costs too
OP is in Canada, he doesn't have plenty of options to choose from, overseas are pretty much out, because of travel costs
i just came back from a 2 week trip in Italy-Monaco-France-Spain (from Verona-Monte Carlo-Nice-Marseille-Barcelona-Milan), you wouldn't expect it, but it wasn't too expensive either
for instance we stayed in a hotel for $50/night/person with breakfast next to Monte Carlo
we spent around $6k in 12 days, but it was for 4 person
we traveled by car, so a good portion of the money went on gas
i just wrote this to prove that a one week trip for $1k for 1 person is definitely doable, but you can't choose destinations too far from you (doesn't matter how cheap they are), because the traveling costs will "kill" you
if you don't have too high standards/don't buy useless expensive stuff, you can get along on a budget even in developed countries, but then again, you need to get there somehow
