Yes you can mix up the niches to your liking i.e 6 sites for health and the other 6 for gambling niches.

This looks fantastic. I think you answered this before but I'm still not totally clear: the starter package offers "5 Powerful Private Blog Networks Build Around PR 2 Domains." Does that mean you'll purchase and repurpose 5 PR 2 domains? A network has to consist of at least 2 sites so I think saying 5 networks implies a lot more than 5 domains which seems a little confusing. Unless that's what is included which would be amazing. Thanks.

I just have a couple of questions/points which need clarifying, which were not clear to me from reading the FAQ, so I'll post them here in case anyone wonders about the same things:
1. If I order 12 blogs will I have to pay 12 lots of hosting fees each month (after the first month)? Would that be 12 x $5/month more or less?
2. Can these blogs be administered from one central control panel in one of the Wordpress sites, or using Wordpress COmmander software or something like that?

That is correct, you would have to pay for 12 different hosting for about $2 per site (not $5 that would be way too expensive just to support a single domain).
We have personally tested hundreds mom n pop hosting account (both good or bad, mostly bad) out there in order to provide the best host for client.
So what you're going to get is the best ones that are both cheap and reliable (no/low downtime).
I know this is a bit of hassle to pay for 12 different hosting account but is required to get the best out of the network, and most of work had been covered by our service anyway (signing up for a new host, configuring the cpanel and nameserver, etc).
If you like to use SEO hosting instead then we can work with that as well.

Yes you can, but we didn't cover this in our service because we deliberately avoid this type of control panel management to keep the network safer as the main focus here is to avoid any potential footprint as much as possible as oppose to focus on convenience (SEO Hosting/Wordpress Management).
We can give you 1 or 2 tips on how to setup this kind of management if you're interested.

One last question because this is something that is not 100% sure: The first month of hosting is covered with the package fee and the domain registration fee is also covered for one year, correct?
When you push the domain to our own registrar we need to pay the domain renewal fee again correct?
And I already have an seohost.com 15 IP package which can be upgraded to more IPs. Would you be able to add and setup all the ordered sites in there as well so I have one WHM panel to control them or would you recommend to spread them over several mom and pop hosting provider? Any help and personal experience or advice appreciated.
And on the order form you ask for target keyword, url and niche? Why is that?
I mean I can understand the niche - to find niche related expired domains, but what do you need the target url and keywords for? You do not link directly or do you? If so, can I also just give the niche and then once the content is added and everything is setup and the ownership is transferred link to my money sites myself?

Correct and yes you need to take care of the renewal yourself after a year.
Our default approach is to focus on minimizing footprint as much as possible, hence the mom and pop hosting (which are PITA to setup initially but are much safer down the road).
If you like to manage them under a single seo hosting then we can work with that, but bear in mind that you've raise the overall risk by not putting them into separate hosting acc.
All in all it depends on how big your network is, if you're having less than 10-20 sites then you will most likely be fine in this setup.
