If your business doesn’t have a high chargeback rate, I’d recommend Stripe. Just keep in mind that they’re quite strict, although their fees are competitive.
Another option is to work under someone who already has a large Stripe account, which can be arranged in a smart way, though they’ll likely charge higher fees.
As for crypto payments, there are plenty of available options.

There a an Israeli payment processor, forgot the name though. Worth to check it
 
What's your processing volume + Dispute rate, this way it's easier for people to redirect you to the right place.
 
Depends on you want to KYC or not. For KYC, alot of options like Paypal, Stripe, Bybit, Bitget. For non-KYC, there're some like loompay.io, but DYOR before you go, top up a few to test. Hope it works

For individuals, PayPal Personal or digital wallets let you receive payments, but most credit-card processors require a registered business. For crypto, Coinbase Commerce, BTCPay Server, or NOWPayments let you accept payments without a business account.
