Can anyone help me simplify the process for setting up an iphone for posting to the US?

I just want to run 2 accounts (1 personal, 1 business), all original content. Basically it's my accounts, I just live outside of the US for most of the year and don't want to impact my accounts.
Steps as far as I understand (plus questions):
Also I know to turn off all location services, but how do I actually connect to the internet? I thought I read somewhere that if wifi is turned on, the phone will use neighboring wifi networks to determine your actual location (even if the wifi you connect to is set up as a proxy or vpn). Is that true or do I need to connect with mobile data from whatever country I'm in?

- Get new iphone. That's easy, I can go to apple store in the US before traveling again.
- Buy USA SIM. Any recommended carrier? Does it need to be a US plan with international data? Ideally I would actually get a working cellphone number as I will want to do some texting from that device (from my business). I have no problem paying a monthly fee for that. Also the guide says physical SIM is better but the new iphones in the US only have esim. Is that a problem?
- New iCloud account created in the US. No problem.
- Set All Dates, etc. to US. No problem.
- Set Location in App Store to US. No problem.
