TBH traffic from most types of proxies will show up in Google Analytics, but on the proviso that the bot you use them with is capable of executing GA javascript and providing all the datapoints needed to look like a legit end user.

Most of the traffic now comes from mobile phones, according to my personal observations

Interesting finding about the VPNs. GA likely ignores traffic from known VPN IPs or if the 'visitor' (the bot you used) doesn't properly execute the necessary analytics javascript – that's why quality residential/mobile proxies combined with a capable bot are usually needed to register realistic-looking traffic.
