when you think about it, you have a lot of your personal info linked to all your wallets. Many apps require your ID too

so how in hell are crypto payments considered "anonymous" or "under the table"? You can be identified as easy as if you were paying via your bank account

They're anonymous by being public. It's like hiding a tree in a forest of other similar trees.
 
They are semi-anonymous when you acquire them privately/without KYC, but most are inherently not since all information is on a public ledger.

Some privacy focused coins like Monero and Zcash are truely anonymous, you can't view the ledger and transactions are untraceable.
 
They are not anonymous at all if you buy and transact using an exchange. Why do you think governments in most countries don't care about banning BTC/ETH, or most of the popular coins and chains from a crime prevention perspective? It is easier for them to track criminals using a digital trail than it is for them to track criminals using cash.

Now, if you look at something like Monero which is constantly being banned, de-listed, and scrutinized by exchanges and law enforcement agencies all over the world, it becomes pretty obvious that XMR is the best choice for remaining anonymous with crypto. It's the preferred currency for criminals on the internet for a reason.

to be anonymous, private, and a free person in crypto never KYC for anything (no exceptions!!) and always use privacy coins like Monero to pay when available (blockchain is not transparent), and when not available use an instant exchanger like trocador.app to convet your Monero to any crypto on the fly. If you are using public blockchain cryptos to transact (literally every coin outside of privacy coins lol), even if you acquire them without KYC you have a high risk of linking yourself to the payments you make if you are not extremely careful.

As long as you don’t interact with CEX. It’s truly anonymous.

Crypto can be anonymous, it depends on what you know and how you do it.
 
Monero is only one i will trust for anonymity others the transactions are public. That is the difference .... even if you buy monero with kyc exchange once you send from there is hard for anyone to track it as transaction is not public available for anyone
