I see in many niches top results are 3000+ of content. Can you outrank with 2000 words content? Also, can fresh domain 6-8 months outrank 4-5 years old?

Age of domain has a plus point. But if you have good Content with proper siloing, backlinks. You can outrank it.

Right now I would rather hesitate to say anything regarding the running core update.

First question - and no offense, meaning it serious: most of such questions can be answered with common sense. Just answer the abstract master question: does "it" find the sweet spot between Gs wish to fulfill user search intent and to sell ads?

Second question: core update... uhh. Seemingly it is pretty difficult to compete with established sites, also for long tail keywords. Let's await start of april.

1,500 - 2,000 word articles are doing just fine. Just make sure that you cover the topic extensively. 3,000 word articles are too much fluff, i wrote more than 500 of these.
