Mullvad. based in Sweden. No logs policy. Sweden laws are more open for privacy and allows not to keep logs.
ovpn or Private Internet Access. Also no logs , policy and all three are court/raid proven.

just run them on a virtual machine on your windows pc.

Tails doesn't save your state. It means, that when you turn it off, it will "clear" itself, all your work and files will be deleted. When you turn it on again, it will be like a fresh installed OS. Of course its possible to keep some of your stuff if you choose that in Tails settings.

I bought a new unregistered SIM card and keep changing them every week
I only connect through public wifis
I am running a new session on my pc
a VPN
A virtual machine and a RDP
