Am I actually supposed to be fixing these error pages? Or it's isn't really necessary.

Also don't know if it affects SEO performance.

Yes, you have to fix all of them.
 
Seriously? I've actually never seen anyone with zero errors on their GSC
For real. It's up to you what to fix and what to leave as it is, but if there are errors, you have to fix them.

Fix the ones that are fixable. Sometimes, GSC shows links/pages that do not exists and mark them as having error 404.

It is crucial that you fix pages that have error 404. On your GSC you seem to have 80 of those. Check them out and fix.

Most of the 404 pages are pages I didn't even create a others leads to empty pages. How do you suggest I fix this

You can disavow those 404 pages.

For pages you do not want indexed(those that you have set with noindex tag, ie. - no content/ irrelevant or anything not meant for users to directly land on) you don't fix those. It's not necessarily an error.

It's up to you to decide if you need to fix those types(excluded by noindex tag) of pages.

Yes fix them, those 404 are probably pages you never had in the first place so just submit them for deindexing on gsc and after 1-2 weeks it will be fixed
 
Sometimes you need to fix a few and leave a few. Depends on what you did with the site. If you are getting 404 errors due to deleting unrelated pages, then leave them.
 
You might have some broken internal/external links pointing to these 4xx pages,
There are a few of them, inspect them manually and check how was they crawled, where they were included,

The others are pretty normal to have and you can't do much about,
Expect for the crawled not indexed yet, if the pages are not brand new it means your website is lacking authority,
That can be due to low quality content, weak link profile, etc...
It's not a great sign overall, something need to be changed
